to turkey or not to turkey?

E and I are considering turkey as a GPmoon destination. So far, I have heard nothing but absolutely fantastic reviews from folks who have taken a turkish holiday. It sounds both adventurous and romantic, urban and remote, action (read bartering with a calculator at random night bazaar over rugs)and relaxing (read hammock, cocktail and annie jo recommended book).

we are thinking a couple days in istanbul, then south to the mediterranean coast, then west(i think it's west?), by catching a gulet to the greek islands. I'd REALLY love to ride a camel somewhere in there (it's on the bucket 30 list), but I'm not entirely sure where to put that on the schedule. i hope the husband is prepared for the hours i plan to spend haggling over pottery and kilim's.
